Flax Seed Blueberry Pancakes

INGREDIENTS

1 1 / 2 cups dry pancake mix

1 / 2 cup flaxseed meal

1 cup skim milk

2 eggs

1 cup fresh or thawed frozen blueberries

GETTING THERE:

Insert a non-stick frying pan over medium heat.

In a medium bowl, mix pancake mix and flax seed meal. In another bowl, whisk together milk and eggs. Pour the liquid into the dry ingredients and stir only untilmoistened. Spoon ¼ cup batter into the pan. Then add as many blueberries as desired and cook until bubbles appear on the surface, then turn and cook until brown on the other side.

North Americans are usually lacking omega-3 fatty acids in the diet and flaxseed oil is an excellent complement to them.
